This dish is similar to the common brinjal curry made in India, just a little different from it because this vegetable is sour in taste. Because tamarind water is used in it and it is sour in taste, hence the name of this vegetable is Khatte Baingan.
Ingredients
1. 500gm eggplant
2. Oil 60ml
3. 1tsp fennel seeds
4. 1tsp nigella seeds
5. 1tbsp garlic
6. 1 1/2 tbsp ginger
7. 200gm onions
8. 200gm tomato
9. 2 1/2tbsp green chilli
10. salt as per taste
11. 1tsp red chilli powder
12. 1tsp turmeric
13. 1/2tsp Alkanet powder
14. 300ml tamarind pulp
15. Coriander for garnishing
Process of making Kashmiri Khatte Baingan
step-1. take egg plant, make a cut horizontally and vertically in center.
step-2. Heat oil in a skillet and fry until it turn brown in color.
step-3. Drain it and keep aside.
step-4. Heat oil in a pan add 1tsp fennel seeds,1tsp nigella seeds, 1tsp garlic, 1 1/2tsp ginger and saute for 2-3 min until it turns brown in color.
step-5. Add onion and fry till translucent
step-6. Add Tomato, green chilli and until it turns soft and pulpy.
step-7. Cook for 5-7 min on medium heat.
step-8. Add 1 1/2 tsp salt, red chilli, 1tsp turmeric, 1/2tsp alkanet powder and mix it well.
step-9. Cook for 3-5 min on medium heat.
step-10. Remove it from heat and transfer the mixture into a bowl
step-11. Take the fried eggplant and stuff the eggplant with the prepared mixture.
step-12. Add tamarind pulp and mix it well.
step-13. wait until it boil.
step-14. Add the stuffed eggplant and mix it well.
step-15. Cook for 5-7 min on medium heat.
step-16. Garnish with coriender
step-17. Serve hot.
